2oz. Barr Hill gin | |
3/4oz. fresh lemon juice | |
1oz. honey lavender syrup (recipe below) | |
1oz. Butterfly Pea Flower Tea (see note) Butterfly Pea Flower Tea comes from a blue flower that, when steeped in hot water, produces a vibrant blue tea. When it comes into contact with an acid (like lemon juice), it lightens to a beautiful lavender! | |
2oz. California sparkling wine |
For honey lavender syrup:
1/2 cup honey | |
1/2 cup very hot water | |
1tbsp dried lavender |
Directions

Make honey lavender syrup: Mix honey with very hot water and stir until dissolved. Add 1 tablespoon dried lavender and allow to cool. Strain out dried lavender and use or refrigerate in sealed jar if it will not be used right away.

Shake lemon juice, lavender syrup and tea for 20 seconds with ice. Strain into glass of choice. Top up with an ounce or two of sparkling wine.
