2 large eggs | |
1 cup 2 percent milk | |
1 cup water | |
1/2tsp vanilla extract | |
3 cups all purpose flour | |
1/4 cup sugar | |
3tsp baking powder | |
1/4tsp salt | |
1 cup powdered sugar | |
Oil for frying |
Directions

Beat eggs in a large bowl before blending in milk, water and vanilla. In a different bowl, whisk together flour, sugar, baking powder and salt. Add dry contents to wet mixture and blend until smooth.

In a deep cast-iron or electric skillet, heat oil to 375 degrees F. Use finger to cover the opening of a funnel spout while ladling into it ½ cup of batter. Holding the funnel several inches above the oil, move finger away and move funnel in spiral motion until all batter is in pan. Fry until golden brown, about 2 minutes on each side. Remove excess oil on paper towels before dusting with powdered sugar.
