Fare Well with Citrus Avocado Salad

This salad is one part refreshing, one part visually beautiful. The avocado and citrus complement each other in balance and acidity. The citrus options are abundant; blood oranges and grapefruits can be substituted with navels, mandarins or clementine’s.

2 blood oranges, peeled and sliced
1 large grapefruit, peeled and sliced
1 tangerine, peeled and sliced
1 large avocado, cubed or sliced
1/4cup red onion, shaved
1/4CUP kale, chopped
For the Dressing
3tablespoons olive oil
2tablespoons tangerine juice, squeezed from 1 tangerine
1/2teaspoon maple syrup
1/2teaspoon pepper
1/4teaspoon salt

Directions

For the Salad

In a large bowl, put the blood oranges, grapefruit, tangerine, avocado, red onion and kale.

For the Dressing

In a small bowl, whisk together the olive oil, tangerine juice, maple syrup, pepper and salt. Pour the dressing over the citrus and gently mix.

Layer ingredients in a circular pattern on a dish, slightly overlapping one another, with avocado positioned in the center of the plate. Serve immediately.
