What’s a Thanksgiving dinner without stuffing? This dish is so simple, yet packs a punch in flavor. Fruits and nuts help lighten up the stuffing. Even though it’s labeled “poultry” seasoning, this spice combination is indeed vegetarian and works great for getting those traditional flavors of the holidays into vegetarian dishes. 2 French baguettes, cut into bite-sized pieces
1 cup vegetable stock
1 yellow onion, chopped
2 stalks celery, chopped
1 cup dried apricots, chopped
1 cup dried cherries
1 cup walnuts
1 cup pre-cooked chestnuts, chopped
2 red pears, cored and sliced

Preparation

Preheat oven to 350 degrees F. Toss all ingredients in large bowl. Place stuffing in lightly greased dish and cover tightly with foil. Bake for 45 minutes. Remove and serve warm.
